Germinated Brown Rice Soup With Salmon (90 calories)

Germinated brown rice (発芽玄米) is unpolished brown rice that has been soaked in warm water (appr. 32-40º) for one or two days to alter the flavor and increase levels of nutrients such as γ-aminobutyric acid (GABA). It is softer than brown rice and has a pleasant fragrance and improved health benefits compared to non-germinated brown rice.

Already in the 1970s scientists established that γ-amirobutyric acid (GABA) increased dramatically if brown rice is soaked in 40 degrees celsius water for eight to twenty-four hours. The intake of GABA for eight consecutive weeks suppressed blood pressure, improved sleeplessness and autonomic disorder observed during the menopausal or presenile period. More recently, in 2003 it was found that germinated brown rice may suppress liver damage. In Japan, people in the ancient era may have been eating brown rice soaked.

Gaba is a neurotransmitter, crucial in brain development but also important for the health of various peripheral tissues and organs including, but not restricted to the intestine, stomach, pancreas, fallopian tube, uterus, ovary, testis, kidneys, urinary bladder, lungs and liver.

To prepare, simply pour 200ml of boiling water over the content of one package, stir well.
